خامه یکی از فرآورده‌های لبنی است که از چربی شیر (لایه‌های بالای شیر) پیش از هموژنیزه کردن گرفته می‌شود. در شیر هموژنیزه نشده نیز لایه سبک چربی به مرور زمان در بالای شیر تشکیل می‌شود.
در گذشته تهیۀ این فراورده نیازمند ساکن نگه داشتن شیر بود تا ذرات چربی بر روی سطح شیر تجمع یابند و جمع کردن آن‌ها روش ساخت سرشیر بود، ولی امروزه با استفاده از روش سانتریفوژ و به وسیله دستگاه سپراتور، چربی از سایر اجزای شیر تفکیک می‌شود.
خامه علاوه بر بافت مخملی و طعم عالی، ارزش غذایی بالایی داشته و یک پیشنهاد مناسب برای وعده صبحانه است.
